Vegetarian Japanese Mabo Tofu

Mabo tofu is a savoury dish with mince and tofu in a sauce made from sesame oil, miso paste, soy sauce and sake. This Mabo tofu recipe is a Japanese variation of the dish, made in the style and flavourings of Japan, seasoned with sake, the traditional Japanese rice wine, click here if you wanna try the Chinese version of the dish.

1 block Tofu (about 400g)

3 green onions

1 Tbsp. oil

1 tsp. garlic, minced

1 tsp. ginger, minced

1 tsp. chilli flakes

225g (1/2 lb) vegetarian mince, e.g. quorn or soy

1 Tbsp. sesame oil

2 Tbsp. miso paste

2 Tbsp. soy sauce

2 Tbsp. sake

1 Tbsp. sugar

1 Tbsp. potato starch or corn starch

2,5 dl (1 cup) water


1. Cut tofu into 1-inch cubes. Slice green onions thinly. 

2. In a bowl, prepare the sauce by combining sesame oil, miso paste, soy sauce, sake, sugar and starch and mix until the miso is dissolved. Set aside. 

3. In a wok, heat oil at medium heat. Add garlic, ginger, and red pepper, and fry fro 30 seconds. Add vegetarian mince and cook until it gets some colour. Add the sauce and bring to a boil. Add tofu and stir gently. The tofu is fragile, so be careful. 

4. When tofu is cooked through stir in green onions and sesame oil. 

5. Serve with rice. Enjoy!
