Sweet potato soup M

This is one of the simplest, yet very tasty, soups one can make. Perfect for a chilly autumn evening. A warming sweet potato soup with coconut milk and a dash of balsamic vinegar.

500 g sweet potatoes

2 shallots

1 litre vegetable stock

400 ml coconut milk

2-3 Tbsp. balsamic vinegar

salt and white pepper, ground

Serving suggestions:

Top of the soup with some feta cheese

Top of the soup with bread croutons and sunflower seeds.


1. Peel the sweet potato and the shallots. Cut them into pieces and put in a big saucepan. Add stock and bring to a boil. Cook until the potato is soft.

2. Remove the saucepan from the hot plate. Add coconut milk. Mix the soup smooth. I use a hand blender to carefully mix the soup. Be careful, and avoid splashes, as the soup is still very hot.

3. Taste it of with balsamic vinegar, salt and white pepper. Serve immediately, with some bread croutons and sunflower seeds or top it of with some feta cheese.
