Mushroom soup with wine

700 g yellow onions

50 g butter and 4 tablespoons olive oil

250 g forest mushrooms, sliced

3 garlic cloves, crushed, peeled and chopped

7 1/2 dl vegetable broth

5 dl red or white wine

2 bay leaves

3 twigs thyme

Sea salt and freshly ground black pepper

6 slices of day old bread, cut into dices


1. Slice the onion as thinly as possible.

2. Heat butter and oil in a large saucepan, add the onion and fry it slowly until it is soft and golden, stirring frequently.

3. Add the mushroom and garlic and fry for another 10 minutes.

4. Pour broth and wine, put in the herbs, then taste with salt and pepper, boil and then simmer for 45 minutes. The soup is usually served with day-old bread put in the bottom of each mushroom bowl before serving.
