INGREDIENTS
1 large yellow onion
3 cloves of garlic
1 stalk celery
1 large carrot
500 g of green peas, frozen
3 tablespoons rapeseed oil
3 tablespoons butter
1 cup of cooking cream
1 vegetable broth dice
salt and pepper
For serving
2 dl crème fraîche
1 pot of fresh mint (optional)
DIRECTIONS
1. Chop onions, garlic, celery and carrot. Fry in a large saucepan in oil and butter until soft.
2. Add water so that it covers the vegetables and add vegetable broth. Bring to a boil. When the water is boiling, add peas and cream and cook for a few more minutes.
3. Chop mint and save some leaves for serving.
4. Move pan from the heat, add a little chopped mint and mix the soup smooth with a stick mixer. Serve the soup with crème fraîche and mint.
