INGREDIENTS
4 cups tomatoes, chopped
1 slice onion
4 whole cloves
2 cups chicken broth
2 Tbsp. butter
2 Tbsp. flour
1 tsp. salt
2 tsp. caster sugar
DIRECTIONS
1. In a saucepan, over medium heat, combine the tomatoes, onion, cloves and chicken broth. Bring to a boil, and gently boil for 20 minutes. Remove from heat and strain the soup into a bowl.
2. In the saucepan, melt the butter over medium heat. Stir in the flour and whisk until it turns medium brown, making a roux. Add the tomato mixture, a little at a time, diluting the roux. Make sure there are no lumps. Season to taste with salt and sugar.
