French onion soup

INGREDIENTS

700 g yellow onion, finely sliced

3 Tbsp. butter

1 tsp. salt

½ tsp. of sugar

3 Tbsp. wheat flour

2 litres water

4 vegetable broth dice

100 ml white wine

DIRECTIONS

1. Fry the onion in the butter under lid on medium heat for 15 minutes. Stir every now and then.

2. Remove the lid, and stir in salt and sugar. Continue to fry the onion for 30-40 minutes, stirring occasionally. The onions should get really dark in colour.

3. Sprinkle with flour and mix. Stir in the broth and wine. Cover with a lid and let the soup simmer for at least 30 minutes. Season with salt.


4. Preheat the oven to 250 degrees Celsius. Pour soup into individual oven safe bowls, add a slice of sourdough bread (or baguette) and top with grated cheese. Bake in oven until the cheese has melted and gotten a nice light brown colour.
