Cauliflower soup with Brie

INGREDIENTS
25 g butter
2 shallots, diced
3 stalks celery, diced
1 large cauliflower cooked, trimmed and cut into florets
1 teaspoon Dijon mustard
2 Bay leaves
3 sprigs thyme
1 1/2 litres of vegetable stock
sea salt
freshly ground
black pepper
freshly grated nutmeg
2 cups cream
100 g Brie cheese
chopped chives, for serving
DIRECTIONS
1. Add butter, shallots and celery to a frying pan and fry gently for 5 minutes without it taking colour.
2. Add cauliflower florets, mustard, bay leaf, thyme and broth. Bring a the boil and simmer for 20 minutes.
3. Remove bay leaves and thyme twigs and puree with a rod mixer to form a smooth soup.
4. Season with salt, pepper and nutmeg and stir in the cream.
5.Garnish with slices of brie and chopped chives and serve.
