Shrimp Avocado Pasta Salad I

Classic avocado and shrimp pasta salad tossed in a fresh mayonnaise dressing.

INGREDIENTS

16 ounce short pasta e.g. penne

¼ pound bacon

1 pound shrimps, peeled and deveined

2 avocados, peeled and diced

1 cup Cheddar cheese, shredded

1 cup mayonnaise

¼ cup lemon juice

2 medium tomatoes, deseeded and diced

1 tsp. chilli flakes

4 cups lettuce, shredded

DIRECTIONS

1. Cook the pasta according to the instructions on the package. Drain with the help of a strainer or colander. Rinse under cold running water to cool completely.


2. In frying pan, fry the bacon over medium heat, until brown and crispy. Drain on paper towels to get rid of any excessive fat. Cut into smaller pieces.


3. In a large bowl, gently toss together the pasta, bacon, shrimp, avocados, Cheddar cheese, mayonnaise, lemon juice, tomatoes, and chilli flakes. Serve over lettuce.
