Pasta with Basil and Mascarpone M
Delicious pasta bursting with basil flavour, made in just a couple of minutes. No cooking needed, just some heating.
400 g pasta, e.g. Tortiglioni
250 g mascarpone cheese
1 garlic clove, minced
1 pot of fresh basil
30 g fresh spinach
50 g Parmesan cheese, grated
1. Bring water to a boil, in a large saucepan. Add the pasta when boiling. Cook accordingly to the package (cooking time may differ from brand and pasta sort).
2. With a hand mixer, mix mascarpone cheese with garlic, basil, spinach and Parmesan. Blend until you have a smooth sauce. Add salt and pepper if needed.
3. Carefully heat the cheese mixture in a saucepan. Add the cooked pasta and stir, coating all the pasta with sauce.
4. Serve with some extra grated Parmesan cheese.
