Crab pasta with chilli and coriander M
Crab pasta with chilli and coriander. Pasta recipe. Crab meat and white whine sprinkled with fresh cilantro.
2 Tbsp. Extra Virgin olive oil
1 red onion, finely chopped
2 garlic cloves, minced
400 g linguine
1 red chilli, deseeded and finely chopped
200 ml white wine
200 g white crabmeat
1 lemon, zest and juice
25g fresh coriander, finely chopped
1. In a large frying pan, heat the oil over a medium heat. Fry the onion and garlic for about 8 minutes until soft.
2. Cook the pasta according to the instructions on the package. Drain in a strainer or colander when done.
3. Add chilli and wine to the onions in the frying pan. Turn up the heat and simmer for 5 minutes. When it is doe, it should have syrup like consistency.
4. Stir the crab into the onion and wine mixture, add the linguine and toss to combine. Sprinkle with lemon zest, squeezed lemon juice and fresh coriander. Season to taste. Sprinkled with some extra chilli and good sprinkle of olive oil right before serving.
