Kabocha no Nimono (Simmered Pumpkin) recipe

3 cups Dashi
2 1/2lb Kabocha pumpkin
2 Tbsp. sugar
1 1/2 Tbsp. soy sauce
1/2 tsp. salt
1 Tbsp. Sake
1. Cut Kabocha pumpkin in half and remove seeds. Cut the pumpkin into 3 inch pieces.
2. Bring Dashi to a boil. Add the Kabocha pumpkin. Cover with a lid and let simmer until tender at medium heat, about 20 minutes.
3. To the pot, add sugar, soy sauce, salt and Sake. Reduce heat to medium low, and cook another 15 minutes, or until the pumpkin is cooked through.
4. Remove from heat and let it sit covered until cool.
