Chicken Ramen I

4 cups water

5 chicken wings

2 garlic cloves, crushed

3 slices ginger

2 green onion, cut into halves

2 Tbsp. soy sauce

½ Tbsp. sake

½ Tbsp. mirin

½ tsp. salt

½ Tbsp. sesame oil

150-200g dried noodle, like Chukamen


1 cup bean sprouts, blanched

1 green onion, finely chopped

chicken from the broth


1. In a large saucepan, bring water and chicken wings to a boil. Let boil for a couple of minutes. Remove any foam and fat that rises to the surface.

2. Add garlic, ginger, and green onions, and simmer for 40 minutes, covered by a lid.

3. Strain the soup, but save the chicken wings for later.

4. Season the soup with soy sauce, sake, mirin, salt, and sesame oil. Season and adjust to taste. Keep warm on low heat, covered.

5. In a saucepan, bring water to a boil. Blanch the bean sprouts quickly, just a minute or so. Pick up and strain. Finely chop the green onion.

6. Remove meat from the chicken wings and shred the meat into small pieces.

7. Cook noodles according to instructions on the package. Divide the noodles into two bowls, pour over hot soup, and top with bean sprouts, green onion and chicken.
