Japanese Mabo Tofu vegetarian I

INGREDIENTS
400g Tofu
3 green onions
1 Tbsp. oil
1 tsp. garlic, minced
1 tsp. ginger, minced
1 tsp. chilli flakes
1/2 lb. vegetarian mince, e.g. quorn or soy
1 Tbsp. sesame oil
2 Tbsp. miso paste
2 Tbsp. soy sauce
2 Tbsp. sake
1 Tbsp. sugar
1 Tbsp. potato starch or corn starch
1 cup water
DIRECTIONS
1. Cut tofu into 1-inch cubes. Slice green onions thinly.
2. In a bowl, prepare the sauce by combining sesame oil, miso paste, soy sauce, sake, sugar and starch and mix until the miso is dissolved. Set aside.
3. In a wok, heat oil at medium heat. Add garlic, ginger, and red pepper, and fry fro 30 seconds. Add vegetarian mince and cook until it gets some colour. Add the sauce and bring to a boil. Add tofu and stir gently. The tofu is fragile, so be careful.
4. When tofu is cooked through stir in green onions and sesame oil.
5. Serve with rice. Enjoy!
