Palak Paneer (easy)

Indian food doesn’t have to be complicated. This is an easy everyday version of a palak paneer that can be done in 30 minutes. If you cannot find paneer in your local store you can either substitute it with halloumi or make your own paneer.

INGREDIENTS
1 onion
2 Tbsp. butter
1 tsp. oil
2 tsp. cumin seeds
1 tsp. turmeric
200 ml tomato paste
100 ml water
2 tsp. garam masala
1,5 tsp. chilli powder
200 g fresh spinach
400 g paneer or halloumi, cut into cubes
300 ml cream
salt
For serving
Rice
Naan bread (optional)
DIRECTIONS
1. In a pan, heat butter and oil. Fry onion until soft. Add cumin seeds and turmeric and fry a minute or two. Add tomato paste, water, chilli powder and garam masala. Turn up the heat and let simmer. Stir occasionally until it starts to boil.
2. Turn down the heat. Add spinach and paneer or halloumi. Let simmer for a couple of minutes. Add cream and taste it off with salt.
3. Serve with rice and naan bread (optional)
